Played in the F position, Pig Meat is one of those bragging swaggering kind of songs that calls for some in your face kind of licks. Lead Belly and Ry Cooder, who copied his arrangement, have played it with a slower tempo and more even delivery, but as a solo, i think the abrupt tempo change and a vocal delivery ranging from a pleading croon to a swaggering shout gives the song the kind of life it needs.
